I made the best fast food the other day. I had to share my creation with you. Hubby and I were home and I wanted something good but still healthy. This was SOOO good… and fast!
Ingredients
- Olive oil
- Shredded cabbage
- Sliced onion
- Cooked chicken (shredded)
- Sliced black olives
- Garlic
- Sea salt and pepper
Instructions
I cut some cabbage into ribbons, and set it aside. I used half a head for 2 people. Then I cut an onion in half, around the fat part. Then lay the cut side on the board,and cut half moon slices between the two ends. I used half of the onion for this meal. I opened a can of olives, and cut up half of them. I had some left over chicken in the frig, so I shredded it, and put it in my ingredient pile. I cut up a clove of garlic, but you could add garlic powder if you wanted. I put some oil in the bottom of a frying pan, enough to coat it. turn the pan on after everything is prepped. When it is medium hot, I throw all of my ingredients in the pan. I put about 2 Tbsp of water in over the veggies and put a lid on it. This gets the cabbage softer. After 3 minutes, take the lid off, drizzle some oil on top of everything and stir. Do NOT put the lid back on. Stir every minute or so. I added some grinder pepper and sea salt right before my last stir. When everything is hot and the onions start to caramelize (brown) you are ready to eat!!
It actually took me longer to write this down, than it did for me to cook it. You can’t beat that for fast.
