Easy Mexican Lasagna Recipe -Best Way to Use Leftovers

OK ,so an easy mexican lasagna recipe sounds weird.  It’s the best use of leftovers in the fridge…  my family loved it!

Ingredients

1 chicken breast( or leftovers) chopped up
1 can of corn( kernel or creamed)
1 can diced tomatoes with chilies mixed in
hand full of leftover potatoes
1 cup or so of cheese
11 lasangna noodles
1/2 of an onion

Instructions

Start water boiling:  Start chicken cooking (if raw).  turn oven on to 375. Throw noodles in boiling water.  When chicken is cooked through, dump in everything EXCEPT cheese and noodles.  Heat together on med. heat.  Stew mixture until noodles are cooked, drain them.  put a layer of noodles, layer of mix and layer of cheese.  Repeat until you’re out of stuff,  or the pan is full.  Bake for 15-20 min. ( cheese should be melted)

This is a great recipe when you want a different take on a classic recipe.

  1. You can also use tortilla’s in place of the lasagna noodles…and black beans subbed for the chicken breast!
